Perched on the tip of Cancun's hotel zone with the Caribbean wrapping around it on three sides, Hyatt Ziva Cancun is one of those places that feels almost too beautiful to be real. And the food? It matches the view.

From crispy beachside fish tacos to a whole fried fish served fins and all, every bite here was as bold and unforgettable as the turquoise water stretching out beyond the palapa. This is all-inclusive done right. This is the luxe palate.

I sat down at one of the beachside dining terraces and genuinely forgot what I was about to order. The water out here is that kind of blue that doesn't look real in photos — except it absolutely is.

The resort sits right at the northern tip of the hotel zone, which means you're getting Caribbean views on multiple sides. Whether you're sipping a cocktail at the swim-up bar or waiting for your tacos to arrive, the scenery is working overtime.

This is the kind of place where you budget extra time just to stare.

The Fish Tacos That Started a Conversation

I ordered the fish tacos not knowing what I was about to experience. They arrived in a sleek stainless steel holder on a wooden board — already a good sign — loaded with crispy battered fish, purple cabbage slaw, fresh pico de gallo, and a drizzle of chipotle crema that I immediately wanted to put on everything.

These are not your average resort tacos. The fish had a real crunch, the slaw was bright and tangy, and the crema added just enough heat. Beachside dining hits different when the food actually holds its own against the backdrop.

That Chili-Rimmed Margarita Though

Sip responsibly... just kidding.

This blush-pink, chili-rimmed margarita deserved its own photoshoot and I gave it exactly that. Served in a coupe glass right on the beach with that electric blue water behind it — I mean, come on. It's basically styling itself.

The combination of fruity sweetness with the chili salt rim is that perfect push-pull you want in a beach cocktail. Sweet, spicy, cold, and completely dangerous because you will order three.

They Served the Whole Fish. Fins and All.

This was the dish that made the table go quiet for a moment.

A whole fried fish, scored and seasoned, arriving on a wooden board with a basket of fries, a fresh salad of pickled onions and avocado, and a michelada on the side. It's dramatic, it's impressive, and it tasted just as good as it looked.

The skin was shatteringly crispy while the flesh inside stayed tender and flaky. The pickled onions cut right through the richness. This is resort food with a point of view — rooted in Mexican culinary tradition and completely unafraid to show off.

Bold. Crispy. Unforgettable. This is how Cancun does it.

The Tostada That Stopped Me Mid-Conversation

I was mid-sentence talking about something else entirely when this arrived. Everything stopped.

A golden tostada stacked with guacamole, plump chilled shrimp, cherry tomatoes, pickled red onion, and delicate ribbons of cucumber — it was almost too pretty to eat. Almost.

This is the kind of dish that reminds you how good simple, fresh ingredients can be when they're treated with care. Nothing overworked, nothing overwrought. Just clean, beautiful flavors with a little ocean breeze on the side.
